Day 11. Grilled Cheese

Dear Friend, do you like grilled cheese. I like grilled cheese. My poor college student meal was always grilled cheese. Butter, cheese slices and bread. Simple. But what makes the best grilled cheese. Let’s explore.

First, how we make it. I always do a pan situation, however a sandwich press is absolutely the superior way of doing it. I have yet to invest in one, but Dear Friend you shall be the first to know.

Next up: Butter. I like maybe a little bit garlic in my butter, perhaps some herbs but I am of the opinion butter in any form is superior to Mayo. Yeah I said it. Me and my almost decade plus of kitchen experience (little lore drop for you) hates mayo. Aiolis are the exception but I still barely like those.

Now cheese. I like to do a good combination cheese. Starbucks does mozzarella and cheddar. I am a staple colby-jack kinda person. However I will say this: the key to a great cheese combo is one normal/one pizazz. Starbucks does this, and I have also done this. Go for like a muenster and swiss, gouda and pepper jack.

As for bread. Sourdough. I hear you. I don’t care. Sourdough is essential. What your going to do white bread or wheat bread for your beautiful hand crafted creation of dairy and wheat. Nope, it’s gotta be sourdough. The fancier the better but really any will work
